In that case, noodle recipes are my favorite because it takes a very little time to prepare them. There are lots of noodle packages you can buy, but I prefer A-Sha Dry Noodles.
Where I’m from, almost all the children and adults enjoy noodles both for breakfast and in dinner. And some people can even enjoy them during the lunch time if noodles are prepared with a lot of cheese, meat, and veggies. There are so many ways of preparing noodles and you can keep on trying different recipes for change.
These vegan noodles with coconut curry sauce is one of those noodle recipes that will surely be loved by everyone in your family. You need to add a lot of nutritious veggies in it so that you can stay healthy.

Vegan Noodles with Coconut Curry Sauce
These vegan noodles with coconut curry sauce are a delicious, healthy and fast way to get great flavor into your meal.
- 1 package A-Sha Dry Noodles
- 1 red bell pepper
- 1 large carrot
- 200 g fresh peas
- Handful of fresh herbs ( oregano, rosemary, coriander, and parsley)
- 2 tsp vegetable oil
Ingredients Required For Curried Coconut Sauce
- 200 ml coconut milk
- 300 ml coconut water
- 100 g desiccated coconut
- 1 tsp curry powder
- 1 banana shallot
- 1 clove of garlic
- 1 green chili
- 1 tsp grated ginger
- 2 tsp turmeric powder
- 1 lime
In order to prepare this delicious vegan noodles dish, the first thing you need to do is take a medium-sized pan and boil the noodles in it according to the instructions provided in the package.
It's very important to read the instructions offered in the package if you want to avoid the mistake of over cooking the noodles which can actually spoil the entire taste of the dish.
Once you are done with cooking the noodles, make sure that you use a strainer to drain them well so that you can prevent them from becoming sticky and starchy. After removing the water from the noodles, set them aside.
Meanwhile, you can prepare the coconut curry sauce for which you need to add all the sauce ingredients in the food processor and pulse them effectively. Make sure that while pulsing the sauce ingredients in the food processor, you can keep one tablespoon of desiccated coconut aside for garnishing the noodles in the end. Make sure that your sauce is creamy. Season it accordingly.
Chop the carrot and red bell pepper in fine pieces.
After that take a skillet and heat some oil in it over medium heat.
Once the oil is hot, you can add all veggies in the skillet and stir fry them for a while. Maybe a couple of minutes.
Once you think that the veggies in the skillet have effectively turned golden brown, you can then add your noodles in the skillet.
Mix noodles well with the veggies and then allow the whole thing to cook for a minute. Once you think that your noodles have properly blended with the veggies and the whole thing has cooked nicely, you can then add the sauce to the noodles.
In the end, add all the fresh herbs in the skillet and mix them properly with the noodles and your dish is ready to serve. It’s always good to serve these coconut, curry vegan noodles when it's hot because it tastes the best during that time.
